Usually not. Most jars labelled “pickled” are vinegar pickles — acid was poured in. Fermented mushrooms make their own acid over weeks, as bacteria already present convert sugars into lactic acid. Both end up acidic and shelf-stable. They get there by opposite routes, and they taste different as a result.
That distinction is the whole of it: pickling adds acid, fermenting makes it.
What happens when you pickle something?
You pour a measured acid over the food. Vinegar, water, salt, aromatics, usually heat. The jar is acidic within minutes, and the flavour is essentially set by what you poured in.
This is why a vinegar pickle tastes the way it does — sharp, clean, front-of-the-mouth. The mushroom takes on the brine's character. Change the vinegar and you change the pickle.
It is also fast and repeatable. Twenty minutes of work, a day of waiting, and the result is the same every time. That predictability is exactly why most commercial jars are made this way.
What happens when you ferment something?
You submerge the food in salted water and wait. Bacteria consume the available sugars and produce lactic acid. Acidity climbs gradually over days and weeks instead of arriving all at once.
Because the acid is produced rather than poured, it develops alongside other compounds. The result is rounder and more savoury — the sharpness sits further back, and there is more going on behind it. It also cannot be rushed. A ferment takes the time it takes.

Why does a ferment taste rounder?
Because acid built slowly behaves differently from acid poured in.
A vinegar pickle presents one dominant note — acetic acid — and it hits immediately. A ferment produces mostly lactic acid, which reads as softer and less aggressive, and it develops while other flavour compounds form around it. You notice it as depth rather than sharpness: the mushroom still tastes like mushroom, where a strong vinegar pickle can bury it.
Neither is better. A sharp pickle is exactly right next to something fatty. A ferment is better when you want the mushroom itself to come through.
What does fermenting do to texture?
It firms the mushroom without cooking it soft.

Heat is what turns pickled mushrooms mushy — the canning step is usually the culprit. A ferment works at room temperature over weeks, so the mushroom's structure stays intact and gradually tightens. Firm varieties benefit most. A dense mushroom like king oyster develops a bite closer to a scallop; small clustered mushrooms like shimeji keep their snap and stay separate instead of matting together.
How long does fermenting mushrooms take?
Long enough that it changes how you plan production. Our five varieties don't finish at the same time, because density and sugar content differ:

Three weeks at the fast end, nearly five at the slow end. King oyster takes the longest because it is the densest — the brine has further to travel. This is the part of the process no shortcut reaches, and it's the reason a fermented jar and a vinegar jar taste like different foods. Which one keeps longer?
Both keep well; the mechanism differs. A canned vinegar pickle is heat-processed and sealed. A finished ferment is protected by the acidity it produced. Either way, what matters is the state of the jar in front of you: sealed and shelf-stable, or opened and in the fridge.

How can you tell which one you bought?
Read the ingredients and the order they appear in.
- Vinegar high on the list — a vinegar pickle. The acid was added.
- Salt-forward, no vinegar or vinegar low down — likely fermented.
- “Marinated” — usually oil and herbs with a little acid, meant to be eaten soon rather than stored.
- Very short stated process — not a ferment. Weeks are not optional.
Taste tells you too. If the first thing you get is sharpness and the mushroom arrives second, it's a vinegar pickle. If the mushroom arrives first with the tang behind it, something took its time.
